I spent a couple of hours yesterday making soup. Among the ingredients were what Commonsense Organics call ‘Maori potatoes’:

Tutaekuri (Urenika): Long yam like tuber with dark purple skin and flesh.

In the shop these tubers are pretty unappealing: dark black, gnarly, with soil caught up in their folds. Peel them though and a wondrous purple flesh appears, streaked with white whorls. [Click the thumbnail image above for a closer view.]
My photo shows several varieties of potatoes and kumara. Usually in the past I’ve made soup from vegies I bought at the supermarket. That’s often been quite tasty.
A few weeks ago though I’d bought a selection of root vegetables from Commonsense, including these Urenika and the soup was stunning.
I must confess, I buy most of my food items from the supermarket, but I realise now that they just don’t offer these interesting varieties of vegetables.
